Save your New Years Resolutions With This Healthy Chocolate Snack

Recently I found a fun calendar for 2023 that lists a different random holiday every day for the year. Today's caught my eye because it's "Ditch your New Year's Resolution Day" and it got me thinking that the 17th of January is pretty early to be ditching resolutions we were so hell-bent on making just over 2 weeks ago.

My resolutions are to be more consistent (with my business and well my entire life lol) and to take better care of myself (be it exercise, better sleep or eating well). There is no way I'm giving them up yet, it's a process after all, and not a perfect one, but if I'd chosen to completely give up chocolate that might be a different story lol.

I thought I would share a recipe today that my entire family enjoys that is a healthy alternative to junk food (but still fills that chocolate craving), in case you're needing help to keep your resolutions.

Healthy Snickers Bar Bites

They really do taste a lot like a Snickers Bar, and if you're not someone who likes dates (I don't either) these use the sweetness of them but mask the flavour. My husband absolutely despises dates but loves these, so trust me it's worth giving it a try if you have a similar distrust of them lol.

Ingredients:

  • Whole Medjool Dates
  • Peanut Butter (real 100% peanut butter, not the kind with added sugar)
  • Peanuts (whole, crushed, whatever you have)
  • Semi-Sweet Chocolate or Dark Chocolate (we use bakers chocolate as it's cheaper)
  • Coarse Salt (kosher, or sea salt are my preference)

Directions:

  • Slice one side open on each date and remove the pit
  • Add a small spoonful of peanut butter inside each date
  • add some peanuts onto the peanut butter (the idea is to sandwich the peanuts and peanut butter inside the date as much as possible). Place each date on a smooth plate or tray that will fit in your fridge or freezer.
  • Melt some chocolate and either drizzle it over the peanut filled dates or use a fork and dip them entirely into the chocolate to cover them (we tend to just spoon some on top, its more than enough chocolate so we have lots left for the next batch and it's easier/less messy).
  • Before the chocolate hardens, sprinkle each chocolate covered date with some coarse salt.
  • Stick in the fridge to harden up and store in a sealed container in the fridge or freezer until your next craving hits (if they last that long...lol). Enjoy!
